Well, I signed up to the WW magazine and I must say that it is awesome! I have read some interesting things. Now I know that spinach is low in call's and fat but high in folic acid, vitamin A, potassium, magnesium and lutein (which is good for the eyes). I have to try this light meal which I shall share with:
Cook 1 cup of spinach over medium heat in a covered pot with 2 tsp. of vegetable or chicken stock, 1/2 tsp. butter and 1 minced garlic clove. Cook until soft, about 4 minutes. Top with poached egg. Points Value 2 1/2
Good tip: chop cooked spinach and blend into light cream cheese for a spread for crackers or baguette rounds
Also, did you know that a study published in the Journal of Nutrition found that consuming seaweed daily reduces estrogen levels and regulates the menstrual cycle, which could in turn ward off some cancers.
